This recipe brings together all kinds of flavors that kids love, whether little kids or teens.
Kids can make the snack plate and then use corn chips to scoop it from the serving dish. It’s rather like a healthy version of nachos, because you’re including beans (whole grain protein), cheddar cheese (rather than fake American cheese), fresh cilantro—you get the idea.
You will need:
1 can black beans or kidney beans (sure, you can always start from dry beans)
1-2 cups cheddar cheese, shredded
1 small jar salsa, spicy or not—your choice
cilantro, 1 bunch, washed and chopped
1 cup corn kernels, canned or frozen/cooked (optional)
Wash and drain the beans and spread them out on a plate. Add the corn if you’re using it, spread over the beans. Top with salsa and cheddar cheese, spread evenly throughout.
Microwave for 1 minute to soften the cheese and melt it slightly.
Sprinkle the fresh, chopped cilantro on top and serve with a bowl of chips alongside.
Eat the snack by scooping it up with the chips.
