Roasted Potato Medallions

This dish is great for breakfast or dinner, accompanying eggs or meat.  If you make it for breakfast, make sure you allow enough time. The potatoes take 30 minutes or more to cook.  The Yukon Gold potatoes have their own buttery flavor and are especially wonderful to use.
Serves 4.

You will need:
5-6 medium-sized Potatoes, Russet (brown) or Yukon Gold
Dried Herbs (try oregano, thyme, or parsley. Vary it each time for a slightly different taste)
Salt and Pepper
Garlic Powder
1/2 – 1 tsp. Chili Powder or Red Chili Flakes  (optional, if you like spice)
Cooking oil spray
2 tbsp. Olive Oil

Pre-heat the oven to 375º F.

Wash the potatoes.  Leaving the skins on, slice them into thick round circles – about a quarter inch thick.

Lay a piece of tin foil on a cookie sheet and spray it with cooking spray.

Put the potatoes in a bowl and toss with olive oil so all are coated. Spread the potatoes out on the foil.
Sprinkle them lightly with the herbs and spices that you like.

Bake in the oven on the top rack for 30 minutes or until the potatoes are cooked through. If you stick a fork into a potato, it will be soft when done.
Serve immediately.
