Healthy Potato Chips

Make your own potato chips to avoid the chemicals and preservatives in commercial chips. Here’s a healthy version.

4-6 Potatoes, very thinly sliced, white or sweet potatoes
2 teaspoons (or more) of your choice of seasonings
(Examples: salt, pepper, cumin, lemon pepper, dill, dried oregano, thyme—finely ground, chili powder, Penzey’s spice mixes, etc.)
Cooking spray

Preheat oven to 350 degrees F.
Cover a cookie sheet with foil and spray lightly with cooking spray.

Spread the thinly sliced potato slices in a single layer on the cookie sheet.  Spray them very lightly with cooking spray such as Pam.

Sprinkle your favorite spices lightly over them.

Bake at 350 degrees until crisp and lightly browned.  This could be as little as 20 minutes, depending on how thinly you were able to slice the potatoes, so keep an eye on them. They keep well in a paper bag.
